Why do they advise you to use double wall stove pipe in the chimney for a wood stove?

Because of the heat. Double-wall provides insulation and decreases the chance of fire. Also protects against smoke and gases leaking out if the inner pipe should perforate. Why do they advise you to use double wall stove pipe in the chimney for a wood stove?
It is a safety issue and helps with ventilation and air flow. Wood stoves as I am sure you know burn very hot and the double wall pipe thickness prevents hot spots in surrounding materials that it runs through such as through the wall and ceiling area leading out and up through the chimney.

If you are installing a wood stove in a mobile home or house the material must meet codes for insurance purposes as well, so adhere to the requirements and you will be fine. Depending on type of wood you burn (some will cause creosote build-up) faster than others and in the down times of using your wood stove be sure to clean or have your wood stove and chimney cleaned on a regular basis. You will get more efficiency from your stove and assure you and your families safety of fires. Why do they advise you to use double wall stove pipe in the chimney for a wood stove?
