I have just suffererd some water damage in my kitchen and need advise on my flooring issue left behind.?

The make up of the floor is a peel and stick over a wood subfloor. I had to remove several sections of wood to allow for drying. So what is left behind now is new subfloor with existing old floor. How do I just remove the existing vinyl to allow for the new flooring or is there an easier solution?I have just suffererd some water damage in my kitchen and need advise on my flooring issue left behind.?
It all comes down to what kind of new flooring system you will be putting down. If First you will need to put down some new peel and stick to fill the old gaps. (pattern does not matter but size and thickness do) If you are going back with vinyl then buy some self leveling compound made for vinyl floors and apply it over the entire floor old and new. When it has cured out just install new vinyl over the old.

If you are going with tile just lay concrete board over the existing vinyl, screw it off and lay your tile. Same with hard wood, just roll your underlayment over the old vinyl and lay the hardwood over that.I have just suffererd some water damage in my kitchen and need advise on my flooring issue left behind.?
You could just put down 1/4'; underlayment plywood over everything and new flooring over that. If there is already underlayment, it probably would be easier to peel that up than to mess with the tiles and sticky residue.
Peel and sticks usually will come up with a floor scraper. A heat gun or hairdryer ( and a little patience) will soften the glue making removal easier..
You can remove the old peel and stick tiles two easy ways. One is with dry ice (not practical) and the other is with a iron and a large flat scraper.

You use the iron to make the tiles hot and use the scraper to loosen and remove them. Making the tiles hot weakens the glue, but be warned there will be a glue residue behind that will be very sticky and must be removed with lacquer thinner or acetone. Both are very flammable on have a strong odor.

without knowing a lot about your kitchen it is not easy to come up with a different solution because there are so many
